Picture of Hoecakes Recipe Photo: Hoecakes Recipe

Ingredients

  • 1 cup self-rising flour
  • 1 cup self-rising cornmeal, or from a mix (recommended: Aunt Jemima's)
  • 2 eggs
  • 1 tablespoon sugar
  • 3/4 cup buttermilk
  • 1/3 cup plus 1 tablespoon water
  • 1/4 cup vegetable oil or bacon grease
  • Oil, butter, or clarified margarine, for frying

Directions

Mix well all ingredients, except for the frying oil. Heat the frying oil or butter in a medium or large skillet over medium heat. Drop the batter, by full tablespoons, into the hot skillet. Use about 2 tablespoons of batter per hoecake. Fry each hoecake until brown and crisp; turn each hoecake with a spatula, and then brown the other side. With a slotted spoon, remove each hoecake to drain on a paper towel-lined plate. Leftover batter will keep in refrigerator for up to 2 days.

Why are school capital projects being blamed for proposed tax increase?br /This question was asked at the county’s budget public hearing: "Only 13 citizens showed up for the public hearing on the county budget on Monday night. This was, however, an increase from the two who came last year.
Of the 13, three people signed up to spea..."

This article really makes me mad. How in the world can Stokes County use the Lottery money that was given by the State for the school system on paying off debts in other areas. Now they try to blame the tax increase on the school system. Well perhaps the county needs to give back the lottery money to the schools. When I worked for the county one of the officers I worked with received a grant from Walmart to purchase the jail riot gear. Well he then had to turn around and give the money to the county and they in turn gave us part of the money and then spent the rest for whatever else. The county should have let the jail use the money and I mean all of it for what the grant was intended for instead of trying to keep a piece for themselves. Like I have always said," Government is crooked and all they want to do is take our money for themselves."
